Ontario OED] With the coming of the frosty days the pumpkin comqs into its own, but the traditional pumpkin pie is not the only appetizing way in which this vegetable may be prepared. It may be used in both savory dishes and in desserts, and forms an inexpensive foundation for very delicious jams and marmalades. Pumpkin Muffins Pumpkin muffins are wholesome, as well as good. Sift together two cup- fuls of flour, V2 teaspoon salt and 2 teaspoons baking powder; add two beaten eggs, 2-3 of a cup of milk and 1 cup sifted, cooked pumpkin. Melt 1/4 cupful butter and add to the mix- ture, beat well and turn into hot, greased pans, and bake twenty minut- es in a hot oven. Canned Pumpkin For Pies Cut up into convenient sections. Core and remove skins. Cook for 30 minutes to reduce the pulp. Pack in clean glass jars; add three quarters of a cupful of brown sugar and 1 tea- spoon salt to each quart of pulp. Place rubber and top in positiml'. Partially seal the jars. Add warm water to come one inch over top of jars, and boil jars for sixty minutes, timing them from when the water commences to bubble. This recipe a1- so may be used for squash. Pumpkin Fritters A .very good accompaniment to a meat stew or pot roast are pumpkin fritters. Sift together a cupful of flour, 1/2 teaspoon salt, 1 teaspoon baking powder. Beat 2 eggs until light, add them to a cupful milk, then stir in a cup of cooked pumpkin. Beat this gradually into the dry in- gredients and beat until very light. Add a tablespoonful of molasses, and bake on a hot griddle, brown both sides. Three quarts raw pumpkin, cut in small dice, 3 quarts granulated sugar, 3 large lemons. Put; pumpkin in preserving kettle; add sugar and let stand over night. In the morning add grated rind and juice of the lemons and place on the v stove to cook. Simmer very slowly until mixture is thick. Place in jars and seal.
