Carefully add a teaspoon or two of cream‘ just enough to bind the mushroom 1 pint ('2 pound) mushrooms 1 10-ounce bag fresh spinach 2 tablespoons cooking oil or butter 1'2 teaspoon salt Black Pepper to taste Dash cayenne pepper (careful here!) Cream 12 5-inch crepes (very thin pancakes, cooked) Parmesan cheese In a large skillet saute mushrooms in oil or butter over moderate heat, about five minutes. Meantime wash spinach leaves, cook in water clinging to leaves in a tightly covered pot. Drain well, chop finely.
