The volume of material. new teaching aids and the need to keep students interested has changed the teaching profession. Teaching has become more specialized today and students have a great deal more choice. The teacher is more like a stage manager, who operates the controls and directs the program. F o r M a r g a r e t Anderson, the evolution in the teaching profession is one she has watched with particular interest for 21 years. Marg is presently a teacher and director of the business education program at Langstaff Secondary School in Thornhill. National president Not only has she seen the changes in teaching, but she has taken part in those changes. For the past two years. Marg has served as president of the Canadian Association of Business Education Teachers. She will attend the biannual convention in Winnipeg this summer and remain for two years on the CABET executive in an advisory capacity. Provincial award The Ontario affiliate of CABET presented Marg with this year’s Hillmer Award, for outstanding business education teaching in Ontario. The slight dark haired woman, who looks mUch younger than her years, enjoys her work. “The students today are very enthusiastic, very interested and I think probably much more mature than they were a few years ago”, she says. As a result, Marg noted, teaching continually presents new demands. Teaching changed “TV, for one thing, has given students an op- portunity to‘ be educated in a different way." “It has also changed the way that we teach. I think of necessity we have to get more variety into our teaching", she ex- plained. Marg refers to the business education program at Langstaff as “the citizenship type". Its purpose is a practical one, she explained, the applications of which are coming into sharper focus. “It’s directed in such a way as to give the students some training to become intelligent consumers.“ After a moment’s pause she added, “To be able to cope with modern life, I think you need to un- derstand about business”. Originally, buttermilk was a residue from the butter churn. Today, it is made from pasteurized skim milk. A culture is added to develop the desired flavour and to produce a heavier consistency than skim milk from which it is made. Buttermilk differs nutritionally from skim milk only in that it contains more lactic acid. This is because the culture changes the lactose (milk sugar) to lactic acrd.
