Decide what grade of turkey you want. Most Ontario turkeys are graded A,B, or utility. The particular grade is determined by certain quality factors: flesh â€" the amount of meat on the carcass and how it is distributed; fat covering â€" the amount and where it is distributed ; finish â€" the presence of defects such as tears in the skin, discoloration, pinfeathers or bruises. On frozen turkeys, the grade is printed on the bag. 0n fresh turkey, look for the grade marked on a meta] tag which is at- tached to the breast of the bird.
