The microwave oven has come into today's kitchen with an impact similar to that of the color TV when it first moved into the family room. “It has replaced the dishwasher as the prestige item in the kitchen," says Sylvia Binkley, home economist with Consumers Gas Company on Elgin Mills Road. However, it seems that people buying the “magic†cooking appliance are not finding it quite as easy a machine to tackle as the dishwasher. After all, the function of the dishwasher was quite clear. “People buy a microwave and they find that they don‘t know how to use it“, Mrs. Binkley said, referring to the number of cooking possibilities created by the new microwave technique. The technique is not really new. It was first designed 19 years ago, but it has only come into residential use in the last few years. On Dec. 7 at 8 p.m. the Consumers Gas Blue Flame Room, Mrs. Binkley will demonstrate the “magic of microwave cooking". The three basic uses â€" cooking. defrosting and reheating â€" are achieved when the energy generated by a magnetron tube produces radio frequency waves. It is these same waves that, when transmitted into the oven cavity, bounce off the six interior walls and trigger the vibration of water particles on the outside of the food. “The microwave oven is not really intended to replace the conventional range, but to be used in conjunction with it,“ she explained. Chicken Cordon Bleu Cooking Time: 7-8 minutes Standing Time: 3 minutes 4 large chicken breasts, boned and skinned 4 slices Proscuitto ham 4 slices Fontina cheese All-purpose flour 1 63% Corn flake crumbs Place each chicken breast between two pieces of plastic wrap. Pound until '8" thick. Top each breast with a slice of ham and a slice of cheese. Fold in half and press chicken around edges to completely seal in ham and cheese. Roll in flour, then in beaten egg, then in corn flake crumbs. Place the four pieces around a lightly greased plate, with largest sections to the outside. Microwave on Roast setting seven to eight minutes. Let stand three minutes before serving. Serves four. Tangy Peach Crumble Cooking Time: 8 minutes Standing Time: 5 minutes 1 can (28 ounces) sliced peaches, drained 2 Tablespoons orange juice 1-3 cup all purpose flour 1-3 cup rolled oats 1-3 cup firmly packed brown sugar '4 teaspoon nutmeg 2 teaspoons grated orange rind 3 Tablespoons butter Place peach slices in a Lia-quart glass casserole. Sprinkle with orange juice. Combine flour, rolled oats, sugar, nutmeg and orange rind. Cut in butter until mixture is crumbly. Spoon mix- ture on top of peaches and microwave on high eight minutes Let stand for five minutes before serving. Serves four to six.
