D-2 â€"â€" THE Now is the time to start checking Christmas recipes By SHEILA PECK You don’t need to check the calendar to realize that Christmas is only a few weeks away if you have children in the house n.|- nu v y y....... -.. Daily we seern {abé made more aware of this fact through advertising, the mail, Santa Claus parades and conversations that gradually lead to this festive season. And suddenly our minds shift into Christmas planning and preparations and schedules and lists become of upper importance in our thinking. n1 ,‘,._4.\.‘ Many of you will have made your Christmas cake by now and thinking of all your favorite Christmas collectibles that have become traditional recipes with your family. Let me share some of ours with you. Spiced beef needs aging for at least a few weeks. It requires three weeks to cure the meat but make sure you use a non-metallic container or glass bowl with plastic wrap and a lid to cover the beef while curing. Spiced beef should be kept in a cool place â€"â€" your refrigerator or storage room. Order the juniper berries and saltpeter from the druggist, in advance, so you will be sure to gel ï¬hem. r L-_r K‘_-_‘ LL,‘ 9-. ........ When you order your roast of beef from the butcher ask him to remove all the fat and tie the roast for spicing. Use a round steak roast cut from the bottom about 8 to 10 pounds in size. “ Elk surfaces of the béef with about 34 cup lightly packed brown sugar. Place in a crock or non-metallic container and let stand for a day in a cool place‘ a ‘ - ‘ uu,,,|,,, The next day grind in a food grinder, blender or food processor, 1 ounce of juniper berries and combine with '2 ounce of saltpeter, 12 cup salt. 2 tablespoons pepper and 3 tablespoons ground allspice. \_ Store the remaining spice mixture in a covered jar. Repeat this procedure daily for three weeks, turning the roast each time, Note: some of the juice will come out of the beef but will gradually be absorbed back into it as time progresses. At the end of three weeks, remove the beef from the crock. pat dry amd make a paste of three cups of all-purpose flour and one cup of water. Completely cover the roast with paste. Bake in a preheated oven at 325 degrees for about 312 hours or until tender. Cool. Remove the paste covering. Wrap in waxed paper and foil and keep refrigerated wï¬tjhéome of the spice mixture completely over the beef roast, making sure the spices get into all the cracks of the meat v. . . u . _ V v r ,.._,0, Save the outside piece when slicing and replace to protect the meat from drying out. Serve cold‘ wél‘oiced Beef should be sliced paper thin and is delicious served with pickled eggs. This recipe for cranberry nut banana bread is great to have on hand for coffee and sherry parties during the holidays. but makes a most appreciated gift also. It freezes well and can be made in advance. CRANBERRY BANANA BREAD one third cup shortening two thirds cup sugar 2 eggs I “4 cup flour 2 teaspoons baking powder ‘2 teaspoon salt '1 teaspoon soda '2 cup chopped walnuts 1 cup mashed ripe bananas I cup drained. freshly-cooked cranberries Cream the shortening and add the sugar. Beat until light and fluffy. Beat in the eggs one at a time. Silt the Flour, baking powder, salt and soda together. Fold into the egg mixture. Gently fold in the chopped walnuts, 1 cup of mashed ripe bananas and the 1 cup drained, freshly-cooked cranberries. To this I add chopped maraschino cherries, a few chopped nuts and the zest of an orange. And an ounce or two of rum or brandy adds a special flavor, also. Mincemeat pies are made and frozen “raw†to be baked and served warm when needed and tiny [arts of mincemeat are also frozen, but in the cooked state and topped with a dab of hard sauce and a piece of either red or green cherry. The French-Canadian Tourtiere is another recipe that rates high on the list of advanced Christmas baking. Not only are they delicious Christmas Eve eating but make wonderful and appreciated gifts. 1 freeze them in the raw state too, and bake them just before serving or delivering. 5 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda 1 pound lard 1 egg ice water 2 tablespoons vinegar Sift the flour into a large bowl with the baking soda and salt. Cut in ‘2 pound of lard with pastry blender or two knives until it resembles fine meal. Add the rest of the lard until it looks like course meal. Place the egg in a measuring cup, whisk lightly and fill the cup to the 1 cup measure with iced water. Whisk lightly to incorporate egg Add 'vinegar. Mix the eggâ€"water mixture into the flour a little at a time until the flour forms a ball. Wrap in xwax paper and refrigerate or freeze until needed. This recipe is enough for 3 pies: A W. N.
